‘For those peeps who like to eat their protein powder instead of drinking it,’ Mini Mathur shares her go-to breakfast recipe

If you hate the taste of protein powder and prefer hiding it inside your food, Mini Mathur’s protein rich uttapam recipe might just become your next breakfast or lunch staple. “For those peeps who like to eat their protein powder instead of drinking it.. this one was given to me by @shwvenkat and I make it ever so often!!” she wrote in the caption of her latest Instagram post, while detailing the process of whipping up a quick batter with the following ingredients:

  • 1 scoop of protein powder
  • 1 scoop of psyllium husk or isabgol
  • 1 tablespoon of soaked chia seeds
  • 1 small bowl of chopped spinach and coriander
  • 1 egg white
  • salt, pepper and jeera powder to taste
  • 1 chopped onion sauteed in ghee
  • 1 cup water

Method:

1. In a bowl, take all the ingredients and mix everything together.

2. Heat a pan on medium flame and add a spoonful of ghee.

3. Pour a ladle of the batter and shallow fry both sides till golden brown and slightly crispy

4. Add a little bit of your favourite achar while serving hot

Health benefits

Dr Vikas Jindal, consultant, dept of gastroenterology, CK Birla Hospital, Delhi, told indianexpress.com that isabgol, a type of soluble fibre that absorbs water and swells in the gut, forming a gel-like substance, helps soften the stool and promotes regular bowel movements. “It’s particularly useful for people with chronic constipation or irregular bowel habits, and is considered gentle and safe for long-term use. However, an important point to note is that psyllium husk needs to be taken with adequate water,” said Dr Jindal.

Without enough fluid intake, Dr Jindal stressed that it can actually worsen constipation or lead to a blockage in the digestive tract. “It’s typically recommended to take psyllium with at least a full glass (240 ml) of water, followed by additional water throughout the day. Also, it may take a day or two to see the full effect, so consistency is key,” said Dr Jindal.

Chia seeds, on the other hand, lead to improved digestion. These seeds are full of fibre, which helps keep the stomach healthy. “If you struggle with constipation, eating chia seeds daily can help regulate your bowel movements. However, if you don’t drink enough water, they might cause bloating,” he said.

Chia seeds provide a slow-release energy, keeping you active throughout the day. They contain protein, healthy fats, and carbohydrates, which help maintain energy levels. They absorb water, forming a gel-like substance. This helps keep your body hydrated for longer, which is great if you work out or live in a hot climate. These seeds are also rich in omega-3 fatty acids, which are good for the heart. Regular consumption can help lower bad cholesterol and reduce the risk of heart disease.

Both isabgol and chia seeds expand in your stomach, making you feel full for longer. This can help prevent overeating and support weight control. However, eating too much can lead to extra calorie intake.

“The added scoop of protein powder helps meet the protein requirements of the uttapam, and coriander and spinach add fibre and iron to the dish. Ghee adds a dash of healthy fats,” he added.
