Eggs are a powerhouse of various vitamins and minerals. Beneficial for brain health, heart health, and even the eyes, eggs can be consumed in numerous ways — boiled, poached, and even as a curry. Dr Rohini Patil, MBBS and founder and nutritionist at Nutracy Lifestyle earlier told indianexpress.com that eggs have the following nutritional values:
Vitamin A – 6 per cent
Vitamin B5 – 7 per cent
Vitamin B12 – 9 per cent
Phosphorus – 9 per cent
Vitamin B2 – 15 per cent
Selenium – 22 per cent
But, if you want a break from boiled eggs and omelets, then celebrity fitness trainer Yasmin Karachiwala has the perfect yet easy recipe for you — egg frittata.
“Today, I have this easy frittata recipe that is healthy and quick to make,” Yasmin wrote as she shared the recipe.

Ingredients
*2-3 egg whites
*Sweet potato, washed and cut into cubes
*Small carrot slices
*Feta cheese
*1 tbsp olive oil
*1 clove of garlic, crushed
*A pinch of salt
*1 tsp black pepper powder
*Fresh basil leaves, roughly chopped for the garnish
Method
*Bring 1 cup of water to a boil in a large pan covered with a lid.
*Add a pinch of salt, sweet potato cubes, sliced carrot, and garlic, and cook for 5 to 7 minutes until the sweet potato and carrot are slightly soft.
*Remove the vegetables from the water and keep them aside.
*Beat the egg whites vigorously with a whisker until it becomes frothy and bubbly
*Heat the olive oil in a pan over medium flame. When the oil is hot add the egg whites, then scatter the cooked vegetables evenly over top.
*Let the frittata cook on the stove for 2 minutes
