Many good things have come out of the Levant and none is tastier or healthier than the Fattoush, a Lebanese salad made of vegetables and fried or toasted pieces of pita bread. The great thing about this salad is that it is flexible and the preparation time is minimal. Another upside of this dish is that it allows for the use of stale bread, which would otherwise be thrown out. Just toss together some seasonal vegetables and herbs according to taste and you have a fabulous and low-calorie salad. But for authenticity8217;s sake it8217;s best to stick to the mandatory ingredients, which include cucumbers, scallions, tomatoes, lettuce and day-old pita bread which is to be toasted until its brown. For the dressing, whisk together some extra-virgin olive oil, lemon juice and black pepper. If you8217;re feeling too lazy to concoct this at home, troop to Souk at the Taj Mahal Palace and Tower, Apollo Bunder, or tuck into this Mediterranean delight at the Mabruk at Sahara Star, Santa Cruz.
