The Central Institute of Post Harvest Engineering and Technology (CIPHET) has developed an ohmic heater for stabilisation of rice bran oil. The technology,which is likely to help in scaling up the production of rice bran oil and increasing its shelf life,is the first of its kind in the country.
CIPHET Director Dr R.K Gupta today handed over this technology to V Gowathaman,an entrepreneur from Chennai who had requested the institute to develop the technology.
Notably,with increasing health awareness,the use of rice bran oil is on the rise due to the presence of many naturally occurring antioxidants. Rice bran oil has a very high smoke (burn) point,making it perfect for deep frying,pan or stir frying. It is a premium choice for replacing hydrogenated oil,which contains trans fat. Rice bran oil creates less polymers than other oils,giving it a better flavour and becoming easier to clean-up
Senior scientists Dr Devinder Dhingra and Dr Sangeeta Chopra,who developed the ohmic heater for rice bran,said that ohmic heating was most advanced technology available anywhere in the world.
Through ohmic heat we will be able to preserve many important ingredients and also increase the shelf life of rice bran oil, Dhingra said.
Gowthaman said that he oil processed through ohmic heating was far superior to that processed by conventional methods. He said that many health benefits were attached to this oil.
I will start commercial scale production by using CIPHET technology in Chennai, he added.
Dr Deepak Raj Rai,Head Transfer of Technogy and ITMU Incharge Dr D.M Kadam were also present when the technology was handed over to the entrepreneur.
