Pad Thai translates as stir-fried thai style noodles, which is exactly what it is. It traditionally is made with flat rice noodles, stir fried with fish or soy sauce for vegetarians, fresh red chillies, lime and tamarind sauce. These are then garnished with crushed peanuts, coriander and sprouts. Alternately, it can be made using chicken, tofu, shrimp, etc.The traditional version though is dry and light.
The dish is extremely popular outside of Thailand, especially in America and Australia, and is sometimes served heavier and more oily.
