CWGs food chief on how to feed 30,000 people a day
Rick Aylett,director of Delaware North,the caterers of the Delhi CWG,with Taj Sats as partner,has a simple motto: no one should go hungry. The experience of feeding players at the Melbourne CWG four years ago helps Aylett.
The Games Village kitchen is spread over 10,000 square metres. So,how many people can his kitchen feed? 30,000 to 40,000 meals a day. Ingredients needed per day? Thirteen tonnes of rice,two million 500ml bottles of drinking water,10,000 pounds of fresh meat,8,000 pineapples,to name a few. How many eggs come in every day? That is the only question that leaves Aylett stumped.
The food drill begins when the perishables arrive in a convoy of 100 vehicles. The security is informed in advance and trucks are first taken to a centre outside the Village to be screened. Once they have been X-rayed,each truck is sealed and labelled.
How different is the Delhi experience from Melbourne? Jugaad, Aylett says. That8217;s the word I8217;m looking for. In Delhi,we somehow do jugaad and things fall into place at the last minute.
