After a tiring day at work, hairstylist Jasbir Arora looks forward to the time when he can go back home and relax. Quite regular, right? Jasbir, however, has an unusual way of unwinding 8211; by rustling up dinner! 8220;I cook regularly 8211; every night,8221; he says. What8217;s more, he has been cooking since he was 10. 8220;Cooking was my father8217;s department on Sundays and I learnt by observing him in the kitchen.8221; Jasbir is not from the cooking for basic survival8217; school of thought. He believes in thoroughness as much in his professional life as in his cooking, so it8217;s no wonder when he says that his cooking experiments have always been successful. 8220;My parents have a collection of recipe books. For the initial experiments, I used to follow those recipes to the letter and later evolved my own cooking style. I am a meticulous cook 8211; I must have all the ingredients of a dish ready before I start to cook,8221; he says.

Other than Chinese cooking, which Jasbir likes but has not dabbled in, he has tried his hand at every kind of cuisine. He reveals that he does have a soft corner for South-Indian dishes. 8220;I was born and brought up in Chennai so I guess it is only natural that I am more inclined to South-Indian dishes.8221; No wonder he digs idlis, dosas and all those yummy snacks which are among the dishes that he cooks.

Jasbir8217;s forte, though, are the South-Indian curry-based dishes with crabs, chicken and fish, a particular favourite being Kozhi Kolumbu, a chicken curry. 8220;I have not done too much in the desserts department except this dish called Chocolate Upside Down Cake, a frozen cake which my family likes as well.8221;

Cleaning up after the cooking? 8220;No problem!8221; says Jasbir, who believes that 8220;you make the mess so you had better clean up.8221;
