Moong Dal Ki Goli is made with split green lentils grounded to a paste, cooked and made into small balls. Serves 6-8 Ingredients 1 cup split green lentils (dhuli moong dal) - soaked for 2 hours ¼ tsp baking soda (mitha soda) 2-3 flakes garlic - chopped, 1 tbsp chopped ginger, 2 green chillies - chopped 4 tbsp oil 2 tbsp whole wheat flour (atta), a pinch asafoetida (hing) ¼ tsp turmeric (haldi), ½ tsp salt COATING MASALA 2 tbsp oil 2 onions - chopped finely, 2 tomatoes - chopped finely 3-4 flakes garlic and ½” piece ginger - chopped finely 2 green chillies - deseeded and chopped ¼ tsp garam masala powder ¾ tsp salt 2 tsp tomato ketchup 2 tbsp chopped coriander Method * Drain dal. Grind dal with soda, garlic, ginger and green chillies to a paste. Grind the dal till you get a very soft and smooth paste. * Heat oil in a kadhai, add whole wheat flour and stir for a minute. Add asafoetida, turmeric, salt and dal paste. Cook on medium heat for about 4-5 minutes, stirring constantly till the mixture becomes thick and collects like a ball. * Remove from heat and while still warm shape the mixture into small marble sized balls. Keep aside. * For coating masala, heat oil in a kadhai, add the onions and cook till golden. Add ginger, garlic and green chillies. Cook till masala turns brown. Add tomatoes. Stir to mix well. Add salt, garam masala. Add ¼ cup water. Cook covered for 3-4 minutes on low heat. Add coriander and tomato ketchup. Keep aside. * At serving time, heat the masala and add moong ki golis, mix well and serve hot.
