Summer is here. What better way than to welcome it with five lip smacking recipes made from raw mango
What is it about raw mangoes (Kayree),the moment you hear the word,your mouth starts watering. “Raw mango is a very seasonal fruit,people celebrate its arrival with lot of interest,” says Chef Subhash Sinha,Marriott. Mango has many medicinal qualities as well. As chef Merajuddin Ansari of Oakwood hotels puts it,”It is a source of vitamin C and pro vitamin A. It also protects you from the scorching heat.”
Raw mango & prawn salad

Ingredients: Raw mango -1,Prawns 3,Fennel 20gms,Mixed lettuce/Aragula 10gms,Salt to taste
Black pepper to taste,Olive oil 5ml,Lemon juice 1tbsp,Basil 1sprig,
Preparation: Peel raw mango and grate. Blanch prawns in salt water,cool once cooked. Finely slice fennel bulbs. Pick lettuce and refresh in cold water. Mix all the processed ingredients in a mixing bowl.Add lemon juice,olive oil and basil leaves. Mix well. Add salt and crushed black pepper to taste. Chill the salad and garnish with basil leaves.
Raw mango salsa

Ingredients: Raw mangoes medium size 2,Fresh coriander leaves½ bunch,One big red onion ,Pickled jalapeno 10 roundels,Lemon juice ½ lemon,Salt1 tsp,Nachos 250 gms.
Preparation : Finely chop the raw mangoes,corriander leaves,red onions and pickled jalapeno. Add lemon juice and salt to the chopped ingredients and refrigerate. Remove from fridge and serve with crispy nachos chips.
Raw mango curry with chicken

Serves: four
Ingredients: Chicken – 800 gms (curry cut),Raw mango 2 Nos. (normal size peeled & cut into cubes),Garlic paste 1/2 teaspoon,Ginger paste 1/2 teaspoon,Mango pulp 200gm, Garam masala 2 teaspoon, Green chilli paste 1/2 teaspoon, Refined oil 2 teaspoons,Chopped onion 3 tablespoons,Red chili powder 1 teaspoon, Coriander powder 1 teaspoon, Cloves 5-6 pieces,Salt-to taste,Charcoal 2 pieces,Ghee 1 teaspoon.
Preparation : Peel and cut (in cubes) the raw mango. Marinate the raw mango and chicken with ginger garlic paste and chili powder. Keep the marinade aside for 45 mins. Sauté the onions until golden brown color in a pan with oil. After the onions are golden brown,add the ginger garlic paste & let it cook for sometime. Add the green chili paste,red chili powder,Garam masala & coriander powder let the masala cook. Keep stirring the mixture to avoid it from burning. After the masala is cooked and blended well add the mango pulp,the marinated mango & chicken in the gravy & let it cook for 20 mins. Simmer the gravy. Pour the gravy from the pan in another vessel and put hot charcoal,cloves & ghee to sizzle the charcoal and the cloves. Put this in the center of the curry bowl & cover it with an aluminum foil. This will give a smoked chicken flavor. Allow the gravy to cook. Serve with steamed rice.
Raw Mango Cheese Cake

Ingredients : (For Chutney) Raw Mango – 250gms,Sugar – 150 Gms,Chilli Powder – 15 gms,Cardamom Powder – 5 gms, Salt – To Taste,Lime Juice 2 tbsp,Gelatin – 100 ms, Egg White – 3 eggs,Sweet Cream – 150 malls,Mascarpone cheese – 75 mls
Preparation : De skin and grate the mango keep it aside. Heat a pan add sugar and let it cook until the syrup is formed. Add the grated mango,cardamom powder,chilli powder and salt. Let it cool. Make a puree in a blender along with lime juice. Dissolve the gelatin in hot water ,cool and stir into the mango puree. Beat the egg white,add it along with cream.
Fold the cream into egg white along with cheese.
Fold the mixture gently into mango puree. Pour into a dish. Chill in a freezer for at least 3-4 hours. Serve chill.
Raw mango cocktail

Ingredients: Raw mango juice 90 ml,Pineapple juice 30 ml,Vodka30 ml
Preparation : Shake all the ingredients in a shaker with ice cubes and pour into a martini glass.
To garnish
Slice of mango and triangle of pineapple pearced with a cocktail stick.
