As parents, we are always trying to experiment and give the best to our kids in terms of nutrition. However, sometimes it can be tough to come up with new foods to feed our kids. On top of that, children are very picky when it comes to food.
So, how can we provide them with tasty yet healthy dishes that not only ignite their taste buds but also provide the required nutrition? Well, we have got you covered. Recently, chef Meghna Kamdar shared a delicious recipe for cucumber suji dosa on Instagram.
“Whoever came up with this recipe idea in the South, must have been a mother. Because we moms are always looking to add veggies into a paratha, pasta, pizza, burgers, or even dosa. This one’s instant: you need not prepare for it in advance. Enjoy cucumber dosa as kids won’t notice that you are feeding them cucumber. Of course, there is a mild flavour of cucumber that you get which is a bonus. Don’t keep the batter too thick, and spread on medium flame,” she captioned the post.

Ingredients
*1 cup semolina
*3/4 cup water
*3 medium size cucumber
*2 tbsp grated coconut
*1 chopped small ginger knob (optional)
*1 tsp cumin seeds
*1 tsp coriander seeds
*Pinch of turmeric powder
*2-3 dry red chillies
*2 spoon water
*Salt as per taste
*Chopped coriander (if you have any issue in spreading batter than suggest skipping it)
*Oil

Method
*Take 1 cup suji in a mixing bowl.
*Add 3/4 cup water and soak for 30-60 min.
*Further take a mixer jar, and add soaked suji.
*Add 3 medium size cucumber, cut into small cubes.
*Add 2 tbsp grated coconut.
*Add 1 chopped small ginger knob (optional).
*Add 1 tsp cumin seeds, 1 tsp coriander seeds, a pinch of turmeric powder, 2-3 dry red chillies and 2 spoons of water. Grind to smooth the batter.
*Transfer the batter in a mixing bowl (Add a little water if your batter is too thick).
*Add salt as per taste.
*Add chopped coriander (optional).
*Now heat up the pan.
*Put oil and wipe with a tissue.
*Pour batter and spread it around the pan.
*Cover and cook it on medium heat.
*Drizzle some oil around dosa.
*Cook it on medium flame.
*Flip when it turns golden-brown.
*Cook the other side too and take it on a serving plate (make more dosas with the same procedure).
