When Sanjana Sanghi returned to Mumbai after her studies in corporate finance in Boston and London, she realised that she might have to live without her favourite foodie experience: pop-up restaurants. Where else could she find new and exciting quick bites for cheap? A rage in the US and Europe for more than a decade, notable chefs such as Jason Atherton, Camille Becerra and Thomas Keller have opened pop-up stores, appreciating the opportunities these can offer.
The 23-year-old decided to set one up one too. The Pop-Up Hut in Kemps Corner in Mumbai showcases different food items every month. Decorated with colourful framed quotes and lights in old wine glasses, the store invites people to try out the unfamiliar and the unexpected.
Concentrating on a specific food item at a time means that transitions to another menu aren’t too painful. The food is not made inhouse. They come from other chefs, who use the pop-up store as an opportunity to showcase what they have.
Often, this is a chance for established chefs to try something new, free of risk, while young, amateur chefs can give the world a taste of what they offer. Home bakers and home chefs, who have never been paid for their food, have the chance to get a break.
Sanghi is on the hunt for people from all three categories. She’s also keeping an eye out for seasonal specialities. “A pop-up allows us to pick food that is in line with upcoming festivals or seasons. In this sweltering heat, we specifically chose ice-cream as the theme of the month,” she says.
