How often does it happen with you that you overestimate rice quantity? With me it happens a lot of times. For just the two of us, I have the quantity more-or-less perfected but whenever I have guests I am always left with plenty of rice to make a meal for the two of us next day! And sometimes you don’t want to eat rice the next day and that is what happened this Friday. So I thought of creating something different from it. One of my friends had long back told me how I can mix whatever I want into cooked rice and fry or steam them to make a quick snack.
Leftover Magic: Chawal ke pakode (Rice crispies)
Preparation Time: 5 mins| Cooking Time: 15 mins | Serves 4
Ingredients
2 cups cooked rice
1/2 cup gram flour
2 green chillies, chopped
1 onion, finely chopped
2 tsps coriander powder
1 tsp cumin powder
1/2 tsp red chilli powder
1/2 tsp fennel
1/2 tsp ajwain
1/2 cup chopped fresh coriander leaves
Salt to taste
A pinch of asafoetida
Oil for frying
Method
• Mix together all the ingredients (except oil!) and make a firm dough using water as required.
• Heat oil in a deep pan. Shape the dough into small balls and deep fry until golden.
• Alternatively you can also steam the balls.
• Serve hot with chutney and ketchup!
