At a recent skincare launch event, Vogue India caught up with Pooja Hegde to learn about her beauty and wellness rituals. As the Bollywood star revealed her go-to secrets, the conversation naturally turned to comfort food. “Kori rotti—it’s a Mangalorean dish, and I love it,” shared the Kisi Ka Bhai Kisi Ki Jaan actor.
To dive deeper into this South Indian delicacy, Indianexpress.com spoke with celebrity chef Ananya Banerjee, who said, “Kori rotti is a popular Mangalorean dish. It’s a delicious combination of crispy flatbread (rotti) served with a spicy chicken curry (kori),” she said.
Here’s a recipe for Mangalorean-style kori rotti:
• 2 cups all-purpose flour
• 1 teaspoon salt
• 1/4 teaspoon turmeric
• 1/4 teaspoon red chili powder
• 1/2 cup coconut milk
• 1/2 cup water
• Ghee or oil for brushing
• 1 pound boneless, skinless chicken thighs or legs
• 2 medium onions, chopped
• 2 cloves garlic, minced
• 1 inch ginger, grated
• 1 teaspoon cumin seeds
• 1 teaspoon coriander seeds
• 1/2 teaspoon turmeric
• 1/2 teaspoon red chili powder
• 1/2 teaspoon garam masala
• Salt, to taste
• 2 tablespoons coconut oil
• 2 tablespoons tamarind paste
• 2 tablespoons coconut milk
