Anushka Sharma and Virat Kohli are very particular about their diet and have been strictly vegan for almost a decade now. Virat has credited his diet and lifestyle for his exemplary performance on the field, and Anushka has also been championing the benefits of clean eating for a while now. So a couple as strict as this wants to celebrate with food, the chef has a challenge on their hands. Chef Harsh Dixit, who is one of the most popular private chefs in the entertainment industry, recently spoke about cooking for the celebrity couple, and when he had to make a dish that was supposed to be made with snake wine and snake meat.

In a chat with The Hollywood Reporter India, Harsh said, “For Virat Kohli and Anushka Sharma’s anniversary in December 2019, I made Pho, but with a twist.” While the couple is vegan, traditional Pho is prepared with non-vegetarian ingredients. He added, “There’s chicken and beef in the broth. But they were eating gluten-free at the time, so we went with rice noodles, which are traditional in Pho and gluten-free.”

Pho is a part of Vietnamese cuisine and this presented another challenge for Harsh. He shared, “Vietnamese cuisine includes a lot of snake – snake wine, even snake meat. So, how about serving ‘snakes’ to vegans?” He then came up with the idea of serving snake gourd and make it the hero ingredient of the dish. “The idea was to have fun while staying within the dietary boundaries. That’s what being a private chef is about,” he said.

In an earlier chat with IANS, Harsh had shared that he was informed just hours before the dinner was scheduled. “There was a lot of madness that went behind that too, because I got a call for it on a Saturday, and I shared the menu that evening. Their anniversary was on Thursday in 2019 and they wanted to bring in via a Wednesday night dinner. I only got the confirmation on a Wednesday afternoon at 12:30,” he shared.

He shared that it was a private dinner at their home which was completely vegan. “It was a five-course vegan dinner, an entirely private dining experience in his home. For me, the opportunity was not just a win professionally, but it also underscored the importance of providing personalised, private dining for athletes who can’t enjoy the same restaurant freedom as others,” he said.
