Chef Bhaskar Juyal chooses continental food over Indian cuisine as it is healthier and less spicier
If not a chef, then which profession would you rather be in?
If not a chef, then I believe I would have been part of the Indian Army. Nevertheless, this was just a second thought; my mind was always bent towards cooking. I always wanted to be a chef and today I have lived up to my dreams.
Which cooking method do you feel is the healthiest?
Well, according to me,steaming, baking and grilling are healthier ways of cooking. So,I think that Mediterranean cuisine is the healthiest cuisine, because it mostly comprises of the above three methods of cooking coupled with less usage of spices. Moreover,Mediterranean dishes are often made with olive oil and healthy herbs; my favourite dish being ‘Shishtouk’ it comprises grilled chicken with Arabic spices to add flavour to it.
Which ingredient according to you, outside salt, makes a dish tasty?
Well, apart from salt, pepper and lemon make a dish delicious.
Do you prefer Indian or continental food?
I definitely prefer continental cuisine because Indian dishes are very rich and mostly spicy and deep fried. Continental food,on the other hand,is less spicy and healthier. My favourite is Lasagne.
Which is that one dish that reminds you of home the most?
It has to be Aloo Methi. I love the way my mother makes it!
Puneites are sworn foodies; are they experimental too?
Puneites are very experimental when it comes to food! For instance, few years back Thai food was not at all popular in the city, but today you will find Thai restaurants at every corner of Pune. People here adapt to different cuisines really fast.
