Carrot Corn Magic with strawberry dressing

Ingredients:
1 medium size onion
100 gms carrot
50 gms green peas
50 gms corn
1 medium size cucumber
1 medium size potato
1/2 bunch lettuce
4-5 sprigs mint
15-20 gms peanuts
Salt and pepper to taste

For dressing:
5-6 or 50 gms strawberry
10 gms honey
10 gms lime juice
Ginger juice optional

Method:
Clean, peel and wash all the fresh vegetables in ice-cold water to retain freshness. Grate the carrots. Boil the potato, green peas and corn. Chop the onion along with the cucumber and boiled potato. Remove the leaves from lettuce and arrange it on a plate. Roast peanuts and crush them coarsely.

Mix honey, lime juice and pulp of the strawberry for dressing. Toss all the vegetables with strawberry dressing and arrange it on a lettuce plate. Sprinkle peanuts and finely cut mint. Chill and serve.
