This lip-smacking recipe for Gochujang chilli oil noodles will take just 10 minutes to prepare

Korean music, drama, and food have made their way into our hearts. So, if you love noodles and spices, then you must definitely give the Gochujang chilli oil noodles recipe a try. This recipe by Ayushi Gupta-Mehra has garnered more than 18 million views on Instagram and takes just about 10 minutes to prepare. Re-sharing her immensely popular recipe on Instagram, Gupta wrote, “With over 18m+ views, this has been my most popular recipe of all times! Seeing the remakes and reading firsthand how much you’ve loved the dish too, has honestly been as gratifying as the soul-stirring comfort of these noodles themselves”.

GOCHUJANG CHILLI OIL NOODLES RECIPE

Ingredients:

Noodles
Garlic cloves
Gochugaru sauce
Sesame seeds
Sesame oil
Spring onions
Chilli-garlic mixture
Peanut butter
Rice vinegar
Soy Sauce
Lime juice
Sugar
Miso (optional)

Procedure:

Cook noodles of choice in a pot of boiling water. Drain and set aside, reserving some of the noodle water.
.To a heat-proof bowl, add:
– 2-3 finely chopped garlic cloves
– 1 – 4 tsp gochugaru (Korean crushed red pepper flakes; can sub with regular chilli flakes but the flavour will not be the same)
– 1/2 – 1 tbsp sesame seeds
– Handful of spring onions.
Gently heat 1.5 tbsp of sesame oil and once hot, pour it over the chilli-garlic mixture. Let it sizzle for a few minutes , then whisk in the remaining ingredients:
– 1 – 1.5 tbsp Gochujang paste/ red chilli paste
– 1 – 1.5 tbsp smooth peanut butter
– 1 tbsp rice vinegar
– 2 tbsp soy sauce
– 1/2 tbsp miso (optional)
– 1 tbsp lime juice
– 2 tsp sugar
Taste and adjust according to preference, for instance adding more lime juice for a zing. You could even add a dollop of your favourite hot sauce to amp up the heat.
Now mix in the noodles along with a splash of the noodle cooking water. Toss until evenly combined and serve with more spring onions for garnish.
