Chef Ramesh Kukreti says as the hospitality industry is growing,Puneites are becoming more demanding

Since when have you been in this profession?
I have been in this industry for eight years now. Prior to joining the hospitality industry I was in the Indian Army for two years as a Lieutenant. After I left the army I enrolled myself for a Chef’s course at Pusa in Delhi and since then,my passion for cooking has been growing with each passing day.

What is the one ingredient that you cannot do without?
Salt of course,because it is the one ingredient,which can make or spoil a dish. You have to know the right proportion to use it and the right type of salt as well.

Name three food items which are perfect combination of health and taste?
* Rocket salad with over roasted cherry tomatoes and parmesan shavings
* Norwegian salmon steak with house mashed potatoes and bearnaise
* Ajwaini fish tikka- Fish marinated with carom,red chilli and flavored curd.

Name three ingredients,according to you that make any meal tasty?
Salt,pepper,and olive oil. These are the three ingredients that can truly enhance the taste of any dish and any combination of its flavours is excellent and liked by everyone.

Are Puneites open to experimentation with food in your opinion?
With so many companies,educational institutes and potential clients increasing by the day,the hospitality sector is without a doubt the most demanding industry in Pune today. New innovative services and delectable cuisines are competitively offered making even the expats feel at home as well as offer something new to Puneites. Customers are well aware of different options available to them and also know a lot more about food and wine than what they knew a few years back. Also,the cosmopolitan culture just adds on to it and people are more open to try out new dishes and cuisines.

Norwegian salmon steak

Serve Time: 30 minutes

Ingredients

Salon Steak -1

Potatoes – 50 gm

Garlic – 5 gm

Salt – 10 gms

Egg – 1

Oil – 50 ml

Mustard – 20 gm

Pepper – 5 gm

Butter – 10 gm

Cream – 10 ml

Procedure: Marinate salmon with salt,pepper,thyme and oil. Cook the salmon on a griller. In a pot,boil the peeled potatoes till it gets soft. Mash the potatoes and add garlic,salt,butter and cream. Finish with béarnaise sauce.
