Tub tim krob is a simple Thai dessert that consists of pink waterchestnuts served with coconut milk and crushed ice. The waterchestnuts are soaked in red syrup to give it the pink colour,coated with tapioca flour and then boiled so as to retain the coat and flavour. It is then served with sweetened coconut milk and crushed ice. The dish is popularly referred to as rubies in coconut milk.
