Tabbouleh
(Pronounced as Tab-boo-leh)
Tabhbouleh is a Levantine salad thatis often used as a part of a mezze,or selection of appetisers. The name is derived from the arabic word Tabbule,which means a little spicy. The salad primarily consists of bulgur (mixed wheat cereal),finely chopped parsely,tomato,onions and other herbs seasoned with lemon juice and olive oil. The lemon juice gives it a slightly bitter tinge. Seasonings generally include black pepper and sometimes,cinnamon and allspice. Originally,it was served with a lettuce leaf,but now it is increasingly served with pita bread,especially in the US. This light and flavourful salad is one of the most popular middle easterndishes for vegetarians .
