Tabhbouleh is a Levantine salad thatis often used as a part of a mezze,or selection of appetisers. The name is derived from the arabic word Tabbule,which means ‘a little spicy’. The salad primarily consists of bulgur (mixed wheat cereal),finely chopped parsely,tomato,onions and other herbs seasoned with lemon juice and olive oil. The lemon juice gives it a slightly bitter tinge. Seasonings generally include black pepper and sometimes,cinnamon and allspice. Originally,it was served with a lettuce leaf,but now it is increasingly served with pita bread,especially in the US. This light and flavourful salad is one of the most popular middle easterndishes for vegetarians .
