Last year,the Mumbai outlet of Michelin Star restaurant Hakkasan found itself amidst controversy over doggy bags. Veteran actor Tanuja was reportedly upset that the eatery did not allow its customers to carry home leftovers.
However,Hakkasans new menu,which marks their second anniversary in India,addresses this issue. The Bandra restaurant has now introduced single-serve options for several dishes that will prove sizeable enough for two diners. Earlier,our portions were too big,sometimes enough to serve six people. In cases where only two or three guests were at a table,portions would be left over,especially when they ordered starters or multiple dishes. The single-serve option,priced at a lower rate,will address that problem, says Ketan SS Gohel,General Manager,Hakkasan Mumbai.
The decision was taken keeping in mind guests feedback after approvals came through from their London headquarters. We dont allow doggy bags to be issued because Hakkasan believes in sustaining the quality of the food that comes out of its kitchen. We cannot control the environment beyond our doors and when the food will be
consumed next,
says Gohel.
Apart from the single-serve portions,Hakkasan has also introduced other changes to the menu in order to suit Indian sensibilities,such as a bigger dimsums menu,more vegetarian dishes,such as Braised Bean Curd with Gourd Melon and Cloud Ear and Stir-fry Lotus Root and Asparagus in Black Pepper.
There are also a few Jain dishes in the menu. Apart from this,a few new Cantonese dishes such as Crispy Duck Salad and Stir-fried Chor Chong Chicken have been added. Gohel says,Usually,all Hakkasan menus across the world look the same and offer the same services. But India is a unique market and we realise people here have different needs. The menu has been introduced keeping that in mind.
