The Balkans,a region that includes Bulgaria,Croatia,Kosova,Montenegro,is known for communism and changing boundaries; not so much for captivating cuisine. Now,Bulgarian chef couple Vita Bozadzhieva and Hristo Todorov Aleksiev are serving a Balkan feast at the Park Plaza ,Gurgaon with timid flavours of herbs,plenty of tubers and meat. For long we were a communist country and were cut off from the rest of the world. People are beginning to travel now and many of my colleagues are looking to Europe and Asia for work, says Vita. While she sourced most of the ingredients from the Delhi markets,she brought along the herb chubritza for that authentic flavour. Our food,mostly stews and stuffed vegetables,is influenced by both Asian and west European cooking styles, says Hristo,serving us a tray of familiar,stuffed vegetables. Capsicums are filled with flavoured rice; mushrooms are laden with crushed tomatoes and even the fish comes packed with nuts.
