The quintessential Chinese meal is undergoing some interesting changes,far from the desi tadka that we have become accustomed to. The kitchen at the newly opened New World Mainland China,at Sakets DLF Place Mall,is putting together a mix of favourite Chinese dishes keeping in mind the way different countries like to have it. So in comes a bit of that fiery green horseradish paste for the Japanese,a bundle of jalapeno peppers for the Mexican palate and a few bowls of olives for those who like Italian flavour,all stirred together in a Chinese wok.
Unlike other outlets of Mainland China in Delhi who follow the same conservative menu,the New World Mainland China is far more experimental. The menu has Chinese dishes,unusually spiced,with flavours that have little to do with China. Wasabi,pinenuts,kafir leaves and cumin,all find their way into the dishes. For instance,a portion of stir fried chicken (Rs 350) accompanies a generous sprinkling of pinenuts and an order of pepper crusted fish fetches a fillet embalmed in the flavours of kafir lime. The food in China has evolved over the years and there have been interesting influences from other cuisines. We wanted to incorporate these new flavours and go beyond Cantonese,Hunan and Sichuan food, says Rajesh Dubey,director,food production,Mainland China. Even the starters have been given new twists a platter of crispy mushrooms now come stir fried with wasabi and mayo. For dessert there is Roasted Coconut ice cream (Rs 180) served on a bed of mango strips in a sparkling martini glass. And if thats not all the mouth fresher turns out to be tiny square of sweet aam papad. Fusion food just got a whole new meaning.
