The 74th Cannes Film Festival is underway. It is one of the biggest events for the film and fashion industry with the most renowned celebrities making an appearance at the red carpet. But it is not only films and fashion which has garnered attention at Cannes. Food has also grabbed headlines.

Recently, the inaugural dinner at Cannes was hosted by Union Minister Dr L Murugan. The menu, titled ‘The Journey Menu’, paid tribute to the International Year of Millets and honoured the various cuisines of India. The dishes were prepared by Prateek Sandhu, one of most sough-after chefs in the country.

Through an Instagram post, Chef Sandhu highlighted his pride of representing India on the international level. “Cannes 2023. Honoured to be repping India and host the inaugural dinner for the Honourable Minister at the Cannes Film Festival,” he wrote. “Excited to showcase my language for the Indian food with this menu,” he added.

Previously, Chef Sandhu worked with Taj and Leela hotel chains before starting own restaurant in Mumbai called ‘Masque’, which has been featured in the list of Asia’s 50 Best Restaurants on multiple occasions. At Cannes 2023, he aimed to blend Indian and French culinary traditions to create a unique gastronomic amalgamation for the guests.

Chef Sandhu showcased rare delights from India like the Khasi dish called Tungrymbai, paired with a local bread called Puthrao and smoked tomato chutney. The menu also saw pepper fry from Tamil Nadu and Millet Thoran (a Kerala-based dish). There’s also millet pulao along with French Sole fish cooked in traditional Malvani flavours. In the salad section, Maharashtrian Potato Koshimbir makes a presence, while the dessert section included Sandesh from West Bengal, Maharashtrian Chikki and Mysore Pak served with Kashmiri Kahwa.

Last year, chef Manu Chandra prepared the inaugural dinner hosted by Anurag Singh Thakur, the minister of information and broadcasting, and sports and youth affairs.
