One of the most riveting matches of the ICC World T20 is here. If you’re watching India take on Pakistan at home this weekend, you’ll need a few quick snacks to get the party going. And, we’re sure you’ll bat for these 20-minute recipes from across the country.
Kurkure Bhel
Ingredients
1 pack Kurkure crushed
2 tbsp – Chopped tomato
2 tbsp – Chopped spring onion
2 tbsp – Chopped cabbage
1 medium green chili chopped
2 tbsp – Fresh coriander chopped
2 tbsp – Malmal sev
1 tbsp – Roasted namkin chana dal
1 tbsp – Salted peanuts
3 tbsp – Sweet mango chuttny
1 tbsp – Lime juice
Salt and chaat masala to taste

Method
*Toss all ingredients in a mixing bowl.
*Keep aside some coriander and sev for garnishing.
*Remove on serving plate and garnish.

Disco Idlis
Ingredients
8 Mini Idlis
1 tsp – Mustard Seeds
1 – Green chilli cut into thin slits
45 – Curry Leaves
1/2 inch – Ginger sliced into juliennes
1 tsp – Salt
A pinch of black pepper
1 tsp – Gun Powder
1 tsp – Chopped coriander
10 ml – Ghee

Method
*Heat the ghee in a wok.
*Add the mustard seeds, ginger,chilli and,curry leaves and let it all crackle.
*Once it’s done add the mini idlis, gun powder, pepper, salt and give it a nice toss.
*Finish it with the chopped coriander and serve hot.

Bhavnagri Cheese Fritters white cheddar, potato & bread crumbs
Ingredients for 1 portion
4 long Bhavnagri chillies, slit in the middle and deseeded
1 Boiled potato
250 gm – Grated white cheddar
30 gm – Pickled and finely chopped jalapenos
1 egg
1 3 tsp – water or milk for the egg wash
1 cup – bread crumbs
1/2 cup flour
Salt to taste

Method
*For the egg wash, whisk the egg until the yolk and white are thoroughly mixed. Add the water or milk and beat it some more.
*Finely chop the boiled potato.
*Mix the grated cheese, potatoes and jalapeños.
*Add required amount of salt.
*Stuff the Bhavnagari chillies with this mixture.
*Follow the threestep breading process: Dredge the chillies in flour and dust the excess flour, dip the chillies in egg wash and finally place it in a tray of breadcrumbs until the crumbs stick.
*Fry until golden brown.
*Serve with your favourite sauce.

Masala Fish Fingers
Ingredients
80 gm – Fish Fingers
2 gm – Turmeric
3 gm – Chili Powder
5 ml – Lemon Juice
2 gm – Cumin Powder
10 ml – Oil
2 Eggs
20 gm – Flour
50 gm – Bread Crumbs
Salt to taste

For Tartar Sauce
2 gm – Capers
2 gm – Gherkins
0.5 gm – Parsley
10 gm – Mayonnaise
1 Green chilli chopped and deseeded
2 ml – Lemon Juice
Salt to taste
Method
*Marinate fish with turmeric, chili powder, lemon juice, cumin powder, oil and salt for about five minutes.
*Coat with flour.
*Dip in egg wash and roll in bread crumb.
*Heat the oil and deep fry the mixture.
*Mix all the ingredients for the tartar sauce together and serve with the fish fingers.
