Olive at Khar announces a belated replacement for its erstwhile head chef

The advantage of building an empire is that one can shuffle resources across different locations,as entrepreneur AD Singh has between the Bengaluru,New Delhi and Mumbai’s Olive restaurants. The disadvantage,of course,is that managing four restaurants across the country means that there will be unequal success. Recently,Manu Chandra,from Olive Bengaluru took over Olive Mahalaxmi in a bid to resurrect its fortunes. Olive Khar,however,did not replace Chef Massimiliano Orlati,or Chef Max,who left a few months ago,until this week.

Chef Justin Dingle,launched his new menu last night. The Australian presented an eclectic fusion menu: “There is wasabi gnocchi with cured salmon and a poached egg which is a take on an Italian and Japanese dish respectfully.” He’s also excited about the plate of suckling pig,which is “a combination of eastern and western principles which see every part of the animal being cooked in a way that presents it in its most sublime.”
