The menu changes aren’t drastic though,and many dishes have merely been toned down and precise explanations provided. Executive chef Ashish Seth has also peppered the menu with Indian flavours. Eight dishes from Italy,the Middle East,South Africa,Thailand and Mongolia,too,have been introduced. “The main attraction is the traditional South African dish — Peri Peri chicken. A fiery preparation,it makes the most of chilli peppers,” says Seth.

Keeping the Aussie flavour alive is the hearty fish burger and an Aussie version of the Ratatouille. Then there’s the Aussie Dukkah—made from Australian bush ingredients,it’s a blend of nuts and,paired with olive oil and bread,it makes for a tasty starter.

“Fish fingers,Asian spiced lamb dumpling and Mongolian noodles with soya chilli vegetables are the other new entries,” informs Kaur. The new traditional menu also offers spinach and mushroom crepe and one can also order a whole wheat option as well. “We have also introduced a ‘meal for two’,priced in the range of Rs 300,which includes sandwiches,salads,pizzas,pastas and risotto,” says the cafe’s Chandigarh owner,Gurtej Virk.

Though the initial response to the food has been tepid,the wine tasting sessions on Wednesday and the Friday Live events have been a hit. “We are set to host DJ Aaron James on September 24,” informs Kaur. The New York-based DJ has toured globally and is currently the creative director and resident DJ with The Love Hotel. “India is now a second home for me and I am now touring with gigs all over,” says James whose speciality is electro-house and hip-house. “I like spontaneity and rarely plan what I am going to play. It’s adventurous that way,” he says.

Kaur is also looking to launch a special winter menu in the coming months. “We will host barbeque sessions as well as brunch. I am also planning to bring in Aussie players to add to the Commonwealth Games excitement,” says Kaur.
