There was a time when the now popular dessert,the mousse,was encountered with curiosity mixed with apprehension. Far from a pastry,but not quite a custard,armed with a name that sounded nothing like its spelling! But in an increasingly globalised world,where international influences can be found in everything ranging from our clothes and music to the food we eat,this French dessert has made its way into nearly every bakery in the country and is popular across generations. Moreover,it is now served in a variety of flavours and forms,with bakers experimenting with the regular chocolate mousse,to offer something more to an audience that is always seeking something innovative. Here are some bakeries and restaurants which are a must visit for mousse fanatics.
Indulgence
A small shop in Koregaon park,its appearance does not betray the range of unique creations that the bakery has to offer. Amongst their varied mousses are the lemon mousse,strawberry and mango mousse (available seasonally),rum and walnut mousse,and of course,chocolate. Mousses are available by the litre. Mousse cakes,on the other hand,can be purchased by the slice. The salt of the biscuit base,juxtaposed with the sweet mousse lends an interesting flavour. Their most popular offering is the Double Chocolate Mousse Cake,which consists of a combination of white and dark chocolate. The best part is that each and every ingredient of our desserts is made at home by my mother,Mazo Hoppel,who is also the owner of the shop, says Neven Hoppel,who runs the bakery.

Malaka Spice
This quaint restaurant,located in Koregaon Park,has made a mark for itself for its south-east Asian cuisine. Among its desserts,the most popular are the Royal Chocolate Mousse and the Chocolate Sin Mousse Cake. The name of the latter is very apt,as it consists of a layer of chocolate sponge,and a coating of chocolate sauce. We use the best quality chocolate to make our desserts,hence their reputation, says restaurant owner and chef Cheeru Chandawarkar.

This bakery,over two decades old,needs no introduction and the city is dotted with its outlets. Known for its reasonable price and great taste,the bakery serves the French Chocolate Mousse,the Blueberry and Vanilla Mousse and the Lemon Mousse. We have found that the French Chocolate Mousse is the most popular. The chocolate flavour is strong and rich. It is the combination of great quality chocolate,backed by a good recipe, says Ravish Arora,director,Bakers Basket.

This bakery in Wanowrie has,in less than two years,managed to make a mark for itself. Its specialty is the eggless and gelatine-free chocolate mousse,a delight for vegetarians. Minus the stickiness of gelatine and the flavour of egg,the chocolate flavour is powerful and the mousse melts in the mouth. How do we manage to maintain the required mousse consistency? Well,that’s the secret behind our dish and that’s what people come here for! says Samir Kakkar,the owner. The mousse cake is also available in interesting flavours like Fererro Rocher,Toblerone and Snickers.

Sweet Chariot
This cafe has a handful of branches in Pune,including one in Fergusson College road,and one in Koregaon Park. Though it rarely makes regular mousse,it serves several varieties of mousse cake. On the menu are a few types of chocolate mousse cakes. Another interesting variation is the Dark and White Marquise,comprising dark chocolate,white rum and liqueur,and the Strawberry Millenium Mousse cake. Our mousse is very traditional. We don’t add any cream to it,so it is rich and pure, says Shivjeet Benadikar,MD,Sweet Chariot.
