Saroj Joshis cookbook Unique Book of Vegetarian Cooking brings dishes from around the world on your platter
With a 120 preparations inspired from kitchens all across the globe the book contains tastes,which are specific to regions that they originate from. Saroj Joshis latest Unique Book of Vegetarian Cooking covers the ancient land of China,the lush green countryside of Tuscany,Italy and combines them with the spices of Mexico and the breadth of India’s culinary culture. The book was launched at Crossword Bookstore at ICC towers in the presence of cartoonist,illustrator and humorist R. K. Laxman and wife Kamala.
Her first cookbook,Palak Preparations in 1999 had 40 recipes made from Palak (Spinach). 2004 saw the launch of her second book Amar Swad. Her international travels have led her to sample diverse cuisines. Many of the dishes have been studied from the locals during my travel abroad where I have interacted with them and learnt the recipes. There have also been experiments where a vegetable instead of the meat has substituted a non-vegetarian dish while retaining the taste. For instance I have used lady fingers instead of prawns for a vegetarian version of the Goan fish curry. Or in the dish Nargisi Kofta I have stuffed nuts and saffron in pear for a rich flavour. Mughlai food appeals me the most for its aroma,it silky appearance and the creaminess of the dish, she adds who also holds cooking demonstrations in the USA during her frequent visits and has been a part of the cooking shows on television.
