Panzanella is a traditional Italian dish that originated in the Italian provinces of Tuscany,Umbria,Marche and Lazio. Eaten most often during the hot summer months,it is a fresh bread salad. The salad is made up of salt-less bread,chopped tomatoes flavoured with olive oil,basil and vinegar. Ideally,the bread should be a day old; because of this the salad is colloquially referred to as “leftover salad.” It is sometimes eaten with cucumbers,anchovies and peppers.

Historically,’Panzanella’ stems from ‘panza’ which is the Roman word for ‘belly’. The salad was served before an expensive second course to fill up the stomachs of the diners. You can try it at Salt Water Café,Bandra,as well as at any big hotel.
