A clutch of caterers working out of tiny kitchens is the best-kept secret of small parties
The city boasts any number of fancy catering addresses for big occasions like weddings. Its when they think small that hosts are stumped? Who,after all,would provide lip-smacking fare for a small gathering of 10? We do, say the Aparna and Sulekha Pasricha,the bakers of Safdarjung Development Area whose tiny kitchen smells like a major bakery on catering days. The Pasrichas arent alone,a clutch of home chefs in the city dont look for big numbers when they roll out platefuls for private parties.
It started as a hobby 15 years ago and slowly mushroomed into a professional bakery, says Aparna,her hands deep in dough. Around her,there are sugary sponge cakes fresh out of the oven. By evening,the duo will pack off 60kg blueberry cheesecake and almond nougat cake to a private address in south Delhi.
We usually hire part-time helpers when there are bulk orders, says Sulekha. The sisters-in-law who have undertaken a week-long culinary course in New York and John Folse Culinary Institute of New Orleans previously supplied goodies to Geoffreys at Ansal Plaza,Hans Plaza at Connaught place and The Park Hotel. Even bigger catering units like Rohit Nandwanis Caterite use their services to feed 300 guests,but the duo is happy providing for small groups. We keep adding new items. The latest is Pecan pie and we will introduce Cajun and Creole desserts soon, says Aparna. The desserts from their kitchen range from Rs 550 to Rs 800 per kg.
At another kitchen,in New Friends Colony,Arvind Singh rolls out plates of Thai curries,raw papaya salads and flat sauce noodles. From the website,www.arvindji.com,you can draft your menu. The site lists options in Thai,Chinese,Indian and Continental with Thai being the hot pick. Daily orders include several rounds at the ministry lunches and party orders at farmhouses. We are more cooks than caterers, says Singh. The food is send out in jumbo steel utensils,but Singh and his staff stay away from the post-cooking work. I can help the host with numbers of people or agencies who can provide waiters and crockery,but we dont get into these hassles, he adds. The minimum order here is for 10 people.
When art curator,Prima Kurien hosted her guests over a traditional Kottayam spread from Kerala,the feedback encouraged her to set up a catering unit. So,when she is not curating art shows,she is steaming cocktail idlis and stirring avail at her home in Greater Kailash for corporate breakfasts and private farm parties. There is a strong Syrian Christian influence in the food,especially in the non-vegetarian dishes. Her menu lists rates for three portions,which is the minimum order and should be placed 24 hours before. Mutton stew,served with appams,comes for Rs 450 as does Meen Moilee,fish cubes simmered in coconut milk. She packs most dishes in aluminum foil and plastic containers. But,when there is an order for biryani,I insist that the person sends her own vessel.
Now,you no longer need a restaurants services or to book expensive catering companies when your colleagues or extended family drops in these home-based caterers are happy to serve.
