A food festival brings the flavours of the Valley to the city

The Great Kabab Factory is looking towards the Valley this month. The Sector 34 restaurant is hosting Daawat-e-Wazwaan,a Kashmiri Food Festival till August 11,with authentic fare from Kashmir being a part of the menu.

The traditional Kashmiri meal,known as Wazwan,is an elaborate,multi-course affair that offers a variety of rich and aromatic dishes. The preparation of Wazwan is considered an art form,and Kashmiris regard it as an integral part of their culture and identity. Kashmiri cuisine is famous for the generous use of spices such as cardamom,saffron,fennel,asafoetida and locally grown chillies.

To recreate the taste of Wazwan,Master Chef Rayees Khan has been flown in from Kashmir to create a menu with specialities such as Rogan Josh,Tabak Maaz and Gushtaba. Vegetarians can try Kashmiri Lal Paneer,Nadru Malai Kofta and kebabs among others.

The unlimited lunch (Rs 595) and dinner spread (Rs 795) will feature classic desserts such as Kashmiri Phirni and Kahwa,a traditional Kashmiri tea infused with the fragrance of saffron.
