S4 announces the arrival of its wine list with a tasting session

He’s been instrumental in redefining the menu at Hotel Metro-35’s swanky new bistro —S4. Having worked for decades in the US,Executive Chef Devinder Singh Mahal has brought with him a range of soups,salads,sandwiches and sizzlers (collectively known as S4). Over the weekend,Mahal held a wine tasting session to announce the arrival of a wine list at S4. “There has been much talk about wines finally making their presence felt in India. But when it comes to the city,I feel diners are yet to truly experience wines in totality,” says Mahal,who announced the arrival of Four Seasons wines at the bistro.

As he shared the nuances of wine and wine drinking with guests,Mahal added that on offer are Four Seasons Indian Varietal Wines (Shiraz,Sauvignon Blanc and Chenin Blanc). “Most people don’t know much about food pairing and this session has been conducted to address these points. I am sure you won’t buy a car without test driving it. Similarly,you can’t choose wine without first sipping it.” As guests sampled bite-sized barbecue chicken wings along with baby club sandwiches,Mahal added,“Shiraz,a red wine with a smoky flavour,goes well with lamb dishes,especially barbecued ones.”

“Like Indian ragas,wines are recommended for certain times of the day. Also like the ragas,they inspire your mood,” he told guests. Cheers to that.
