No Funds : Architect unveils images of drawings of redesigned German Bakery Five months after German Bakery shut down following the February 13 blast,city-based architect Pramod Purohit, commissioned to redesign and rebuild the Bakery, said chances of it reopening on August 15 are bleak as reconstruction is yet to begin due to lack of funds. We need at least two months to make the place functional. The fund in hand at present in not sufficient. The government has given about Rs 14 lakh but the amount is not sufficient as the entire place has to be redone. The estimate comes to about Rs 30 lakh. We are waiting for a loan sanction for the remaining amount. At the very most,we can have a small puja on August 15, said Purohit (59) who took up the assignment due to his close association with the Kharose family. Purohit confirmed that the drawings of the redesigned Bakery are ready and have been approved by the family. Sharing details with The Indian Express,he said the Bakery willhave three levels the ground, mezzanine and first floor - all of which will be connected to one another by a spiral staircase from inside. The ground floor will have seating arrangement for about 40-45 people while the first floor will have a capacity of around 60-65 people. The lower area is about 700 sq ft and though the outside pavement portion is not included,we will have a garden seating arrangement. Though the ground floor will have a pantry and a serving counter, the main kitchen will be on the first floor that is spread over 1,100 sq ft. The final space will be much larger than what it was earlier, he said. He added that the entire structure will be brought down. The first floor is an old flat,to convert that into a restaurant is a challenge, said Purohit, who specialises in restaurant décor and has done some 70 hotels and restaurants in the city in his 30-year career. These include Vaishali on FC Road,Sarjaa in Aundh and Panchratna on Tadiwala Road. I am using rough wood to give the place the feel of a hill station as per the owners request. The wooden chairs will have cushioned seats, said Purohit. Though a lot of old material will be replaced by new-age ones-like stainless steel will replace cudappah in the kitchen. He will try and preserve some part of the older look given that the Bakery is now a part of history,he said.
