Shivalikview rolls out a traditional spread to celebrate Baisakhi
With Baisakhi round the corner,it is not surprising that food festivals centred around that theme are the flavour of the month. Hotel Shivalikview,too,is rolling out their special array of traditional Punjabi delicacies. Baisakhi marks the beginning of a new solar year and we decided to host a food festival to serve regional favourites, says deputy general manager Anurag Walia. Step on to the hotels sprawling lawns and the spirit of Baisakhi is well in place. Traditional festive buntings coupled with mud huts with thatched roof and an ornate gate dot the venue. To complete the rustic Punjab theme,the venue also boasts a bullock cart,a traditional bar and a bevy of dancers dancing to the beat of the dhol.
Chef Vineet Chopra and his team have lined a spread of snacks and a dinner buffet. While the snacks are priced between Rs 90 to Rs 150,the buffet dinner is priced at an all inclusive Rs 250. One can also opt for a combination of meals and snacks priced at Rs 400, adds Walia.
The snacks combine the best of vegetarian and non-vegetarian dishes. The Sharabi Kababi Kukkar is a must try. Made from chicken marinated in the chefs special spices,it is flavoured with rum and roasted in the tandoor. Equally appetising is the Anjeer Di Tikki which brings in cottage cheese stuffed with figs. For those looking to dig into kebabs,the Teh Te Kebabs are worth a bite.
The main course brings in an equally sumptuous lineup with popular favourites like Amchur Bhindi and Moge Wala Kukkar. We highly recommend Meat Beli Ram,a tender and flavoured preparation. Beli Ram was a master chef and an ustad of his times. The meat used in the dish is tender,while the aroma is very tantalising, pitches in chef Chopra. For those sticking to their greens,we suggest you try Heer Ranjha. Quite like its name,the dish is a fine mix,in this case of cashew nut-based gravy and supple koftas. As far as desserts go,it is once again a traditional mix of Kulfi Falooda,Dakke Wali Kulfi and Malpua.
