Dr Ritesh Shah, a senior consultant physician at Bhatia Hospital in Mumbai, added that eggs also contain antioxidants like lutein and zeaxanthin, known to reduce the risk of cataracts and macular degeneration. They may help lower the risk of heart disease and stroke, thanks to their content of betaine and choline, which promote heart health. With their high protein content, eggs can keep you feeling full for longer, potentially leading to a reduction in overall calorie intake.

Ingredients

*Toasted bread
*2 hard boiled eggs
*1/4 avocado
*1 tbsp Greek yogurt
*1/4 tsp Dijon mustard
*Squeeze of lemon
*Basil (or other fresh herbs)
*Pepper and salt

*Mash the eggs in a bowl.
*Add in the rest of the ingredients.
*Season with salt and pepper.
*Spread the mixture on toasted bread.

Korean Style Egg Roll

For those who appreciate Korean cuisine, this unique take on the traditional egg roll is a must-try.

“When I made this, I had no idea that this egg dish is actually a thing,” said Ishita Dan, a food blogger based out of Kolkata. Well, we agree. We didn’t either. So here it goes.

Ingredients

*Eggs as per serving size
*Cooking oil
*Veggies as per taste (tomatoes, green and orange bell peppers, onions)

*Heat a non-stick skillet and add a small amount of cooking oil and spread it evenly to coat the pan.
*Pour the beaten eggs into the pan. Let them cook for a minute or until the edges start to set.
*Using a spatula, carefully lift one edge of the egg and start rolling it towards the other edge. This creates a cylindrical shape. You can use the spatula to help tuck in the fillings as you roll.
*If needed, add a bit more oil to the empty side of the pan, and then roll the egg roll to that side. Continue rolling back and forth until the entire omelette is rolled up and cooked through.
*After your egg whites are done with, add in the egg yolks for the final wrap.

Fried Egg Sando

A Japanese classic, the fried egg sando is a delightful egg sandwich that’s a beloved snack in Japan. Here’s a quick and pocket-friendly recipe for it, courtesy of Hendrik Pyong, a food blogger.

Ingredients

*5 eggs
*4 loaves of bread
*Kewpie mayo (or regular mayo)
*Parsley
*Salt, sugar and black pepper

Method:

*Boil the egg for 8 minutes. If you want harder texture, then it can be 10 minutes.
*Now, put it in ice water to stop the cooking process, making it easy to peel.
*Insert eggs in plastic (Ziplock if available), add chopped parsley, salt, sugar, black pepper, and kewpie mayo. Then, smash it in the plastic until the it is evenly mixed.
*Hold the bread (can use a rope or anything to hold it flat), then stab it with a toothpick, and give a big gap in the bread to put the filling.
*You can fry it directly or air fry it at 200 degrees Celsius for 12 minutes.
*Insert the filling into the fried bread.

Serve it with tomato ketchup for added flavour.
