Indulge in the deliciousness of a South Indian staple by making yourself a lip-smacking dosa with a recipe made from millet grain bajra. As an easy snack option, a crispy bajra or pearl millet dosa can be your go-to meal whenever you are pressed for time. What more? With only a handful of ingredients, bajra dosa can be made in a jiffy and doesn’t require much effort. In fact, there is no need for fermentation too.
All you need is a few minutes of preparation. According to experts, bajra can be your pick for a quick and nutritious meal.
How to make crispy bajra flour dosa?
Here’s a recipe from home chef Renuka Salunke that she shared on her Instagram.
Ingredients
2 cups – Bajra flour
1tbsp – Garlic, crushed
Chopped onion
Chopped carrot
Green chilli
Chilli flakes
Black pepper powder
Salt
Cumin seeds
Coriander leaves
Water – 3 Cup
Oil to apply

Method
In a bowl, add all the ingredients. Check for salt. Add water and mix.
Rest it for 15 minutes.
Now, in a dosa pan, spread some oil. And pour the batter. Allow it to cook on both sides.

With 2023 being celebrated as the International Year of Millets, the inclusion of bajra can be a good start in your millet journey. Experts suggest that compared to staple grains like rice or wheat, millet has additional benefits in terms of better nutritional value.
Apart from the macronutrients, they are also packed with some good amounts of vitamins and minerals like vitamin B6, riboflavin, iron, zinc, and magnesium. “Unlike wheat, bajra is gluten-free, thus a better option for individuals with leaky gut or celiac disease,” said clinical dietitian Garima Goyal.
Bajra being low in glycemic index is also a better option for diabetics to ensure glycemic control, Goyal added. Bajra an all-rounder can be easily utilised in different recipes and replace other grains. “With no change in cooking method, it can replace wheat flour in chapati and semolina in khichdi,” said Goyal. Concurred Zoya Surve, head dietician, Bhatia Hospital Mumbai and said that the complex carbohydrates in bajra release energy gradually, ensuring a sustained release of glucose into the bloodstream and preventing abrupt spikes and crashes.
Mohini Dongre, senior dietician, Narayana Superspeciality Hospital Gurugram said bajra dosa, made from pearl millet, can offer several health benefits. “It’s a good source of dietary fibre, which can aid digestion and promote gut health,” said Dongre.
Including bajra dosa in your diet can help with managing blood sugar levels, improving heart health, and providing energy due to its complex carbohydrates, stressed Dongre, adding, “Just remember that a balanced diet with a variety of foods is key to overall health”.

According to Surve, incorporating bajra dosa into your diet can be particularly beneficial for vegetarians and vegans, as it contributes to meeting their iron and protein requirements.
