Anshula Kapoor loves to eat ghar ka khana and often shares snippets of her enjoying home-cooked meals that mostly comprise her ‘comfort foods‘. One such delicious plate of food she recently shared was the quintessential khichdi, but this time it came with a healthy twist, or rather a vibe!

For the unversed, khichdi is prepared with a combination of rice, lentils, and ghee and is packed with an adequate blend of carbohydrates, protein, fibre, healthy fats as well as vitamins and minerals. Take a look!

What makes khichdi with lots of vegetables a must have?

Khichdi is a power-packed meal that is well-known for its various health benefits. “Khichdi is a wholesome meal that can be consumed by all, during any season. On top of it all, the addition of vegetables to khichdi enhances its nutritional value in terms of fibre, vitamins and minerals content,” said Garima Goyal, a registered dietitian.

What are its other benefits?

Light for the gut – You might have heard your elders suggesting you to have khichdi when sick or facing any digestive troubles. “This is because khichdi is very light for your tummy as it is super easy to digest. During sick days, it gives you energy, protein, and fibre in a single bowl and you don’t need any heavy meals to fulfill your needs,” said Goyal.

Weight loss – Khichdi made with vegetables is a wholesome meal that gives you all the required nutrients for your body. “Adding vegetables to khichdi raises its fibre value and you tend to stay full for a longer time, preventing overeating and hunger pangs, thus aiding in weight loss,” Goyal said.

Non-allergenic meal – Since khichdi is made from rice, it is a gluten-free cereal grain. So all those individuals who have a sensitive gut or are facing digestion troubles due to celiac disease or non-celiac gluten sensitivity can safely have it.

Quality protein – Combining two foods in the right way can amplify its health benefits, and so is the case of khichdi. “Mixing a cereal grain such as rice with lentil and combining it with a source of healthy fats makes it a complete protein, which contains all the essential amino acids needed for growth and well-being. Khichdi and vegetable combinations that you can try

Mix vegetable khichdi – In this type, you can add all sorts of vegetables such as carrots, capsicum, onions, peas etc., giving it a variety as well as a nutritious value too.

Palak and moong dal khichdiPalak or spinach is loaded with iron and thus is a great addition to the diet. It adds to the meal’s nutritive value in terms of iron and is great for those having anaemia, and even for growing children too, said Goyal.
