Bukhara ready with a very meaty platter for Obamas

A meaty menu awaits President Barack Obama at ITC Maurya’s Bukhara restaurant. Fish,lamb,chicken and potatoes are what the team of chefs has decided to put on the ‘Obama platter’,which earned the title after the US President said in Washington DC – prior to his India visit – that he would like a platter named after him.

Incidentally,the ITC hotel had played host to former US President Bill Clinton in 2000 and his wife Hillary Clinton,now the Secretary of State,in 2009. During their high-profile visits,the hotel’s team of dedicated chefs had created a choice menu and rechristened it as the Clinton platter.

While the team has created an assortment of dishes that are different from what the Hillary Clinton platter had,a couple of dishes – sikandari raan and tandoori aloo – are common for both.

The menu is bigger than the palm-size red-and-white menu card that the Clintons received and was christened after them. It will be the same size as the Bukhara menu with the names of dishes printed in black.

Murg khurchan,fish tikka,sikandari raan,tandoori aloo and reshmi kebab are among the seven dishes that have been selected for the platter of the President,who is slated to visit Delhi with his wife Michelle Obama. Among the desserts,he would have a choice between ras malai and kulfi,a dish that won Hillary Clinton’s approval. According to hotel sources,it took them a while to arrive out at a perfect combination of dishes for Obama. “We have prepared the menu keeping in mind his likes and dislikes,” a hotel source said.

Bukhara,a fine dining restaurant famed for its North Indian,Mughlai and Northwest frontier cuisine,has been refurbished to host Obama and his team. Another eatery at the hotel,Dum Pukht,also hailed as one of the finest restaurants in Asia,will reopen around the same time as Obama’s visit. According to hotel sources,the President may visit the renovated restaurant and sample its food.

The 440 rooms in the hotel have been taken over by the Obama entourage,and many rooms at the adjacent Taj Hotel are occupied by members of his security team. The Bill Clinton menu,priced at Rs 4,700,has a Chelsea platter on the other side. Fully vegetarian and priced at Rs 4,200,it features dishes like tandoori phool.
