Where did Bombay Frankie get its name?

Mumbai is a treasure trove of mouth-watering street food. From lip-smacking vada pav to the comforting misal pav, the city of dreams is known to whip up easy and tasty meals on wheels for the hardworking and ambitious thronging the streets. The Bombay Frankie is one such meal, a go-to for tourists and locals who need a pocket-friendly culinary experience.

Celebrity chef Ananya Banerjee explains that the Bombay Frankie, also called a “Frankie Roll” or simply “Frankie,” was created in Mumbai by Amarjit Tibb, the founder of Tibb’s Frankie, in 1969. “Inspired by the Lebanese-style pita wrap he encountered during his travels, Tibb adapted the concept to suit Indian tastes. The dish was named ‘Frankie’ after Frank Worrell, a famous West Indian cricketer admired by Tibb, making the name catchy and memorable,” she said.

According to Banerjee, the Frankie roll typically consists of a paratha or roti stuffed with spiced fillings such as chicken, mutton, paneer, or vegetables, flavoured with tangy chutneys and optional cheese or egg. It has since become a beloved snack across India.

Here’s a simple recipe to help you make this at the comfort of your kitchen:

Ingredients (serves 4):

– Large rotis or parathas
– Oil
– Medium onions, thinly sliced
– Medium tomatoes, finely chopped
– Cup cooked chicken (or paneer/vegetables for vegetarian)
– Garam masala
– Red chili powder
– Turmeric powder
– Chaat masala
– Salt to taste
– Green chutney
– Pickled onions (optional)
– Grated cheese (optional)
– Beaten eggs (optional, for coating the paratha)

Instructions:

Prepare the filling

– Heat oil in a pan and sauté onions until golden brown.
– Add tomatoes, cook until soft.
– Stir in chicken, garam masala, chili powder, turmeric, and salt. Cook for 5-7 minutes.

Cook the paratha

– For an egg layer, spread the beaten egg on one side of the paratha while cooking. Flip and cook until the egg is set.

Assemble the Frankie

– Spread green chutney on the paratha.
– Add a portion of the chicken mixture, pickled onions, and cheese if using. Sprinkle chaat masala for extra flavour.
– Roll in butter paper and serve.
