Whip up flavourful arrabiata sauce pasta with Maria Goretti’s recipe

The spicy tomato-based sauce is made with tomatoes, garlic, onions, red chili peppers, basil, and oregano. It has a tangy and robust taste, with a kick of heat from the chilli peppers.

Arrabiata pasta is a classic Italian dish known for its bold, vibrant, and fiery flavours. The spicy tomato-based sauce is made with tomatoes, garlic, onions, red chili peppers, basil, and oregano. It has a tangy and robust taste, with a kick of heat from the chilli peppers. The combination of these ingredients creates a savoury and well-balanced sauce that pairs perfectly with pasta of your choice.

Chef and VJ Maria Goretti took to Instagram to share her scrumptious pasta recipe. “I love pasta …I don’t eat it very often, because I also try and balance my food but once a week, or sometimes twice, ok truthfully thrice, I make myself a large plate full of pasta, and just slurp it out…I love having Aglio olio e pepperoncino Then a sea food pasta with clams and calamari, I just cannot resist a pesto pasta, I completely love. Basically, I love pasta…,” she wrote.

Ingredients

Zucchini – use a spiral cutter
Olive oil – some
Butter – a nice healthy dollop
Onion -2 chopped
Garlic -8 chopped
Chilli flakes- 1 tsp
Oregano -1 tsp
Sundried tomatoes– 2 tbsp
Tom purée- 2 tbsp
Sugar -1
1/4 cup vegetable stock
White wine -1/2 cup
Fresh Basil leaves – a little
Fresh Mozzarella – according to your liking
Salt to taste

Preparation:

1. In a pan, add a little olive oil and butter. Then add finely chopped garlic.

2. After the garlic becomes nice and crispy, add thinly sliced onions in the pan. Give it a good stir and add some salt.

3. To this add roughly chopped tomatoes whose skin has already been removed.

4. Add chilli flakes, some dried oregano and some tomato paste in the pan. Later, add sun dried tomatoes and some olive oil.

5. Into this add a cup of vegetable stock. Give everything a good stir.

6. Then spiral some zucchini on the side. In a fresh pan, put some olive oil and cook the spiralled zucchini. Later, put it on the side.

7. In the pan where you are preparing the Arrabiata sauce, add 1 tablespoon of sugar, some white wine and fresh basil leaves. Give this a good stir.

8. In another pan, add some oil and put in boiled pasta in it. Pour in a little pasta water that you used in boiling.

9. Add some Arrabiata sauce in the pan where noodles are being stir fried. Put in a little more of the pasta water.

10. Add some fresh mozzarella to the pan. Wait for mozzarella to get melted in the pan and then take it out on a plate.

11. Add some grilled zucchini on top and you are ready to dig in!

How to get skinless tomatoes for Arrabiata sauce?

Just cut a “X” on the top of the tomatoes and put them into hot water. As soon as you see the skin of the tomato open up a bit, take it out of the water and leave to cool, then peel the skin off and use for the sauce.
