Galouti Kebabs, a traditional Indian kebab hailing from the land of Nawabs in Lucknow, recently bagged a place among the best-rated lamb dishes in the world. Taste Atlas, a popular food guide, released its list of the World’s Best 50 Lamb Dishes with the Lucknowi kebabs occupying the 25th spot. Known for its rich and velvety flavour, the unique texture of the delicacy melts in your mouth.
While you can take a visit to Lucknow to devour these delicious kebabs, most of us who are unable to do so can treat ourselves at home with a simple and easy recipe, courtesy of celebrity chef Ranveer Brar.
Recently, chef Brar took to his YouTube channel to share a recipe for Galouti or Galawati Kebab. “Want to learn how to cook the ‘Melt-in-the Mouth Delicacy’ that originated in Lucknow? Check out this recipe for know-how. Happy Cooking!” he captioned the video.
*To make the fine mince, the chef suggested mixing 1 kg of minced mutton with 200 gm of lamb kidney fat. The mixture should be minced properly in a mixer grinder to achieve a perfectly textured base.
*The secret ingredient behind the dish is the ‘Galawat ka Masala’ that gives the kebabs its delectable taste. It includes a combination of exotic ingredients such as betel leaf root, vetiver root, long pepper, allspice, black peppercorns, black cumin seeds, cloves, green cardamoms, and star anise, among others. All of these are finely ground to produce an aromatic blend that gives the kebabs their characteristic flavour.
*Next, the chef instructed us to mix the minced meat with the prepared spice mix, ginger garlic juice, raw papaya paste, brown cashew paste, brown onion paste, kewra water and rose water. For best results, the meat mixture should be marinated for a minimum of 2 hours or preferably overnight in a refrigerator.
*For the final step, in a flat pan, heat some ghee on medium heat for shallow frying. Wet your hands with water and take a portion of the meat mixture and directly place it on the pan while shaping them into patties. Fry until a golden crust is formed on both sides and evenly cooked.
Voila! Your Galouti Kebabs are ready. You can serve them along with mooli aur alsi ki chutney, laccha onion and lemon wedges. Garnish with some mint leaves.
