Alia Bhatt’s creative pursuits go beyond acting and running her kids’ apparel brand––she has now stepped into the world of cooking. In a recent YouTube video, Bhatt shared her mother Soni Razdan’s special mac and cheese recipe, a dish she and her sister Shaheen Bhatt grew up eating and consider the ultimate comfort food.
Milk – 350 ml
Flour: 2 tablespoons
Butter: 25 gm
Grated cheddar cheese: 90 gm
Pasta: 90gm
Salt to taste
Nutmeg: a pinch
Olive oil: 1 tablespoon
Flanked by Razdan, Bhatt first boiled water with a pinch of salt before adding uncooked pasta. As the pasta cooked for eight to 10 minutes, the mother-daughter duo got started on the white sauce.
In a separate pot, they added a bit of olive oil before melting the butter to prevent it from burning. Next, they stirred in the flour, ensuring it didn’t form clumps. Once the mixture thickened, they poured in the milk. Razdan then took over, whisking quickly to emulsify all the ingredients. They continued stirring until the sauce started bubbling, signalling that it was nearly ready.
By this time, the pasta was done. After draining it, they reserved some pasta water to adjust the sauce’s consistency later.
Next, they added grated cheddar cheese and salt to the sauce, stirring until the cheese melted completely. Razdan then sprinkled in a pinch of nutmeg, while Bhatt crushed some black pepper for seasoning. Once the sauce reached the perfect texture, they mixed in the cooked pasta.
Transferring the mixture to a baking dish, Bhatt topped it with extra cheese before baking it for a few minutes until the top turned golden and bubbly. After letting it cool, the duo finally dug in—smiling with satisfaction at their homemade treat.
