There are various treats that can be delicious and healthy, at the same time. And right on top of our list are granola bars! They are made from ingredients like oats, dried fruit, nuts, and seeds and are a good source of protein and fibre as well as other nutrients. However, the ones that you get in the market are usually loaded with added sugar, calories, and artificial ingredients.
As such, Dr Nandita Iyer, author of The Great Indian Thali, took to Instagram to share a nutritious and delicious recipe for granola bars that can be made in a jiffy. Sharing her recipe, Dr Iyer captioned the post, “Better than any store-bought granola with just 10 minutes of effort”.
Check out the complete recipe below:
Ingredients
In the largest bowl you have, mix well:
1/2 cup peanut butter
1/3 coconut oil or ghee
1/2 cup honey
2 tbsp cocoa powder
2 tsp cinnamon powder
1/4 cup water
To this, add
1 kg rolled oats
1/2 cup pumpkin seeds
1/2 cup sesame seeds
1 cup chopped almonds
1/2 cup chopped walnuts
Mix very well to coat with wet ingredients.
The mixture should be damp, if it is too dry then sprinkle some more water and mix well.
Method
– Preheat the oven to 160 degrees Celsius.
– Spread the mixture on 3 lined trays.
– Bake for 20-30 minutes until golden and crisp.
– Then add 1 cup of dried fruit like cranberries, raisins etc. This is optional.
– You can bake it along with the granola but it may burn due to sugar content. Cool well and store in airtight jars.
Pro tips:
Below are a few pro tips to churn out perfect granola at home
1. Mixing wet ingredients in a bowl and then adding the dry ingredients makes it much easier.
2. Ratio of oil: Sweetener is ideally 1:1. You can substitute some of the oil with any nut butter like peanut butter, tahini, almond butter or with applesauce
3. For bigger clusters or bars, using honey works best. Bake in a smaller tray in a thicker layer for a longer time. Do not break it until fully cooled.
4. Adding some water to the mixture prevents it from burning and drying out especially when adding cinnamon, cocoa powder etc.
