This salad consists of chickpeas, feta cheese, roasted red peppers, red onion, cucumber and a Greek vinaigrette made with olive oil, vinegar, Dijon and spices.

Whisk or shake olive oil, red wine vinegar, Dijon mustard, garlic, oregano, salt, and pepper until well blended.
