Memories of food and what’s missing on our plate, with Anumitra Dastidar and Shalini Krishan

All the food that we have ever eaten is archived in our memories. This is one of the central ideas behind Edible Archives, a restaurant-cum-research centre in Goa. The project has been spearheading a new way to think about food memory, food heritage, and food biodiversity. In this episode, Sandip talks to its co-founder Anumitra Ghosh Dastidar and Shalini Krishan about this project, the lack of diversity on our plates, and how the pandemic has affected the restaurant community.

Also in the end, they share the best recipes for ingredients that Sandip hates.
