Black Olive Hummus with Vampire Pita & Graveyard Potatoes

Black Olive Hummus

Ingredients

1 can chickpeas, drained, reserving 1/3 cup of the liquid, 1/2 cup black olives olives, pitted and drained, 2 tablespoons olive oil, 1 teaspoon lemon juice, 2 cloves garlic, minced, 1 teaspoon cumin, 1 teaspoon parsley, 1 teaspoon black pepper, salt to taste

Method

Combine all ingredients in a food processor and blend until creamy slowly adding enough of the reserved liquid until creamy.

Top it with extra virgin olive oil and garnish it with sliced olives.

Graveyard Potatoes

Preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit. Line a baking tray with baking paper.

Wash the potatoes thoroughly and allow to dry only slightly.

Rub them well with salt while they are still rather wet.

Prick them all over with a fork. This procedure will allow steam to escape during the cooking process.

Place them on the prepared baking tray and bake for about 1 hour 15 minutes, depending on their size this might take longer. If the potatoes weigh only about 150 gm, start checking after about 50-55 minutes.

Check if they are done by squeezing one potato lightly, it should just give and the skin should be crispy. If they are not done, prolong the cooking time and check again after 5 to 10 minutes.

Remove from the oven.

Top it with grated cheddar cheese and flash it under the salamander till cheese melts and Garnish it with Fried Rosemary.
