140 showcase talent at culinary challenge

Fifth edition of the Great Indian Culinary Challenge (GICC) held by Hospitality World,Mumbai.

Chefs from across India battled it out for the fifth edition of the Great Indian Culinary Challenge (GICC) held from January 27-29 by Hospitality World Mumbai 2011.

As many as 140 competitors,from leading hotels like JW Marriott,Grand Hyatt,The Leela,Taj Lands End and Trident,showcased their culinary talents in categories such as artistic display,cold display and live cooking.

HospitalityWorld is organised by Express Hospitality,a magazine from The Indian Express Group’s Business Publications Division.

If days one and two saw chefs toil over plated appetisers,petit fours and chocolate displays,the last day had them conjuring the best in plated desserts. The jury consisted of 17 chefs from across renowned brands. Chef Vernon Coelho,President of Western India Culinary Association and one of the jury members,called the turnout impressive. “We even had to stop entries because of technical constraints. More importantly,the quality of the displays has been excellent. The displays that I judged were very modern,using the latest techniques like molecular gastronomy,and were of international standards.” 

Chef Salil Fadnis,executive chef,Sahara Star,Mumbai,said: “We saw nearly 50 per cent increase on entries over last year. Winners of past GICCs have gone on to represent their respective companies at international competitions and forums.” GICC began in 2005 with around 40 participants.
