Mango and feta cheese make great companions, as the sweetness of the mango complements the saltiness of feta cheese really well. A hint of basil micro-greens make these salad skewers totally irresistible.
Ingredients (Serves 4 as a starter)
3- Large ripe mangoes, peeled and cut into neat cubes
200g- Feta cheese cut into neat squares
Basil microgreens or coriander leaves
Dash of balsamic vinegar
* Arrange the mango squares on a platter and top them all with feta cheese squares. Placing the feta cheese delicately using a flat knife.
* Secure with a cocktail stick and place a basil or coriander leaf over each skewer.
* Drizzle balsamic vinegar and chill for 30 minutes before serving.
