In the battle against malnutrition, a lesser-known variety of black rice called ‘Kalabati’ is proving to be a potential game-changer in Odisha. Rich in essential nutrients and vitamins, Kalabati black rice is recognised as a nutritional powerhouse with the potential to address widespread malnutrition, particularly in infants.
A recent study conducted by Payal Sharma, a PhD scholar in the Food Science Technology and Nutrition department of Sambalpur University, has highlighted its impressive health benefits. Her research involved feeding mice a nutrition mix containing Kalabati rice and showed promising results.
This nutrition mix supplement is named ‘Nutri Nest,’ and Kalabati black rice is the key component. The formulation was enriched with peanuts, ragi, soybeans, jaggery, and milk powder.
“After observation, we found the mice who were supplied with Nutri Nest were more healthy and weighed more than the other groups. We are yet to undertake a human trial,” Sharma said.
According to Deccan Chronicle, “Through her one-year study, Sharma has uncovered that Kalabati, which is teetering on the edge of extinction, holds significant promise in combating malnutrition, particularly among infants, due to its rich nutritional content.”
The research scholar is optimistic that her discovery will secure a patent and become available in the market soon, reported Odisha TV.
Kanikka Malhotra, consultant dietician and diabetes educator strongly agrees. She says, “The remarkable composition of Kalabati black rice sets it apart from other rice kinds, making it a nutritional gem. Its powerful antioxidant qualities are demonstrated by its deep colour, a product of anthocyanin pigments. These pigments have a major role in promoting healthy digestion, controlling blood sugar, and preventing chronic diseases, especially when combined with the high fibre content of rice.”
Kalabati black rice is a varied option for people looking for a balanced and healthy diet because, in addition to its fibre and antioxidants, it is a good source of key minerals, including iron, protein, and B vitamins, she adds. Its nutritional profile is further enhanced by phytochemicals, providing further health advantages like lowered inflammation and strengthened heart health.
Malhotra stresses, “All things considered, Kalabati black rice is a nutritional powerhouse that is worthy of its reputation as a great grain because of its special blend of antioxidants, fibre, vital nutrients, and phytochemicals.”

Kalabati black rice can be easily incorporated into everyday diets to maximise its health benefits, confirms Malhotra.
According to her, here are some ways to enjoy it:
As a main course: Replace white rice with Kalabati black rice in your favourite dishes, such as stir-fries, pilaf, or risotto.
In salads: Add cooked Kalabati black rice and salads to boost nutrition and a satisfying texture.
As a breakfast cereal: Top cooked Kalabati black rice with fresh fruits, nuts, or a drizzle of honey for a healthy and filling breakfast.
In soups and stews: Add Kalabati black rice to soups and stews for a hearty and nutritious meal.
As a snack: Enjoy Kalabati black rice by combining it with legumes, vegetables, or a flavorful sauce.
“Kalabati black rice is generally suitable for all age groups, including children, adults, and the elderly. However, it is important to note that infants should not be introduced to new foods until they are at least six months old,” notes Malhotra.
